Got my hand on this box of coveted photogenic viennoiseries from Le Matin some time back when they were a pop up at Bearded Bella.

Chef Matin has an illustrious background being an alumni of acclaimed restaurants such as Andre and Noma. I was treated to a quartet of pastries ($30) - kouign aman, cashew, mulberries & orange escargot, smoked cruffin and lacto fermented plum galette.

Kouign Amann. My favourite of the lot - buttery, crispy and sugary - everything you’re looking for in a kouign amann. There’s a good amount of caramelised sugar that made me wanting to have more and slowly savouring every bite. I’d have this again.

Cashew, Mulberries & Orange Escargot. Is it just me but I found this to be a bit soggy and nothing extraordinary.

Smoked Cruffin. This was literally InTerrysting. Filled with charcoal-infused custard cream and topped with eucalyptus meringue. I found this to be rather exotic as its smoky and savoury.

Lacto Fermented Plum Galette. A Nordic-inspired viennoiserie, I was unable to appreciate the beauty of the galette as the salty and sour taste from the lacto fermented plum overpowered the taste of the sweet, flaky, crispy galette pastry. This is like marmite - hate it or love it.

Taste is subjective. While some of the items didn’t appeal very much to me, I’m sure there’ll be those who will enjoy them. It’s without a doubt that the very essence of the pastry is good.
