Managed to be one of the lucky ones to grab the remaining last few slices left on their last day of operations for 2018!✌🏻Comprising of a wedge of fresh, juicy and sweet watermelon sandwiched within two thick layers of rose-scented light pastry cream along with light and fluffy dacquoise-alike layers, the cake is also topped with fresh strawberries and grapes. Helming from an ex-pastry chef of the renowned Aussie @blackstarpastry that’s also well-known for their Instagram-worthy watermelon cake, this cake certainly didn’t disappoint and satisfied my sweet tooth greatly! 🤓💖 Love how the Rose-infused 🌹 pastry cream perfumes up the cake with a subtle, mellow floral fragrance to the naturally sweet watermelon that might pose a challenge when slicing the cake upon consuming due to its juicy albeit rigid nature. The thin dacquoise layers were soft and fluffy with texture resembling that of meringue , possessing a slight chewy mouthfeel. Wouldn’t mind having another slice of this 🍓🍉🍰 when it make its comeback in February (hopefully I would still be in Singapore till then 🤭).
