The start of the actual course, came a beautiful plated Hand-Dived Scallop Tartare. A refreshing number, the Hokkaido scallops were succulent, plump, and fresh. Nicely seasoned, the seductively sweet mollusk also went swimmingly with the gentle herbaceous and citrusy notes of the accompanying oil pooled at the bottom.Β The caviar on top adding to the whole indulgent experience.
