And it's both an art and a science - he does these science experiments in his private lab through a backdoor within Smokes and Mirrors.

Pictured is a cocktail using London dry gin infused (in his lab) with locally sourced dog fennel. The centre piece sees an olive sitting on ice clear as a crystal. And that's not just any olive - it is treated in house with Idog Fennel and lemon peel. Overall, the cocktail is botanical, herbaceous and a little savoury.
