When an eatery is confident enough to only sell 1 kind of food, chances are they do it really well. ๐๐ป๐๐ป๐๐ป Tucked on Level 1 of @payalebarsquare is Kajiken, also Singaporeโs first dedicated dry ramen โmaze sobaโ shop! ๐ Lots of choices here at Kajiken for you to choose from! ๐๐๐
.
If you exhibit traits of aboulomania, simply go for their Mazesoba with all toppings (U.P $17.30++, now $15.80++)! ๐ Comes with soba & free noodle upsize if youโre a big-eater, this is quite a good deal! โ๐ปโ๐ปโ๐ป

Meat lovers are bound to enjoy the slices of pork char siew ๐, braised pork, & chicken karaage (deep-fried chicken) ๐. My favourite was the char siew, which was extremely succulent despite having quite a substantial thickness. ๐คค๐คค๐คค They just fell slightly short of having that melt-in-your-mouth texture as the cut used was rather lean but still extremely well-executed as I personally donโt like fatty meats. ๐คฃ The pinkish slices even glistened under the light (like some smoked duck), evidence of its freshness & tenderness which was so delightful. ๐ฏ

Their braised pork was extremely savoury & well-marinated but naturally tougher due to the thick cut. ๐๐ป While it could have been more tender, it certainly scored high on taste! โ Similarly, the chicken kaarage donned a crispy exterior fried to the perfect golden brown, while the interior remained soft & juicy. ๐๐๐ Pro-tip: separate the kaarage from the mazesoba immediately to retain its crisp! ๐
.
The savoury seasoned lavier has a distinctive taste which mellows the โsiapโ taste of the spring onions ๐, which gives a nice crunch together with the leek. ๐๐ป When stirred, the springy dry noodles are generously coated with these ingredients, cohesively brought together by that perfectly runny soft-boiled egg ๐ณ that lends a creamy & luscious mouthfeel! โคโคโค

Definitely worth a try or revisit!
