A little bummed that The Bar at Waku Ghin has stopped the practice of simply serving up Patisserie Platine’s cakes before their official opening time at 5pm a couple of weeks ago — the only way to enjoy the Patisserie Platine cakes now is to have them either by takeaway, or to dine-in at the bar from 5pm, though by doing the latter, one will have to order minimally a bar snack from the hot food menu and will not be able to order just purely exclusively from the Patisserie Platine menu only. That being said, dining-in at The Bar at Waku Ghin is strictly on a walk-in basis only — so getting a seat here is almost guaranteed for those who are intending to drop by.

Being one of the new cakes in their refreshed line-up, the Caramel Chocolate Mousse with Spice Banana replaces the Blackforest, and is a twist to the Chocolate Mousse with Vanilla and Macadamia that I absolutely love here — so much that it probably is one of my creations from them. Whilst also featuring a chocolate element, the chocolate here takes a back seat as the caramel and banana elements are the stars of the show in this entremet; first taste into the cake and there is that rich caramel note that strikes immediately — one that is decadent, but seems to emphasise on those toffee-like notes and not so much of its sweetness. While at it, the familiar bittersweet notes of chocolate runs at the back of the tongue; provides a slight smokiness to the caramel mousse that makes the cake really alluring and intriguing — nothing quite like we have had before. What brings that light touch of sweetness to the cake is actually the banana purée hidden within the core of the cake; almost akin to that of mashed banana, one can notice shreds of fibre but we really enjoyed how it gave the cake a pretty balanced hint of sweetness that somewhat carried a consistency of flavour and texture across the entire cake — that usual intricacy and care for detail that goes into the Patisserie Platine line-up that makes their cakes so good.

I am always amazed by how Patisseire Platine’s cakes are such value-for-money for the quality that one is getting — at the price of $11 for this, there is no doubt that the cakes may be a little smaller than the same of most patisseries around, but the cakes here are nothing short of being sublime. Also interesting is how they have managed to keep things fresh here by always introducing a new flavour every now and then, or bringing back a classic one from during their days where the cakes were available at the Renku Lounge. Always excited to be back whenever the opportunity calls upon it (or when a friend suggests so 😂), but it is no doubt one of my favourite places for entremets around.
