The tart comes in 2 distinct layers of matcha white chocolate ganache topped with a cotton-light and smooth cream cheese frosting dusted with matcha powder. The matcha white chocolate ganache was thick with a subtle bittersweet earthy note that could have been more intense. The top layer of mascarpone cream cheese provided a slight tinge of lingering saltiness that was a good balance to the sweeter elements. The tart shell remains firm and solid while bearing a pleasant crispness in texture. The highlight here for me was the houjicha ice cream that’s made in collaboration with @matchayasg , with roasted flavour and aroma that was distinct lingering. The only downside was it’s small portion and low threshold to temperature. Melted way too fast that it became a β€˜sauce’ instead for the chewy dango pieces and tart! πŸ˜… The dango came in trio- 2 original and 1 kuromitsu that were chewy and mochi-like, though not providing much significance in flavours .
