Jook sing noodles (zuk sing meen, 竹昇麵) are a type of rare noodles made from whole eggs, flour and alkaline water to give it its springy texture. Jook sing noodles are rare today because of its labour intensive creation process. The noodles are commonly served as wanton noodles in Hong Kong.

Shrimp roe noodles (haa zi meen, 蝦籽麵) is a noodle dish where shrimp roe is added into the mix giving the dish extra umami flavour and texture. The noodles here were served dry (lou meen, 撈麵), with a side of pork trotter, mushrooms, shrimp wontons and fresh shrimp on kailan served on a side. A generous shower of shrimp roe was scattered all over the noodles giving each bit great chewy texture from the bamboo noodles with little bursts of umami from the roe.
