Jook sing noodles (zuk sing meen, 竹昇麵) are a type of rare noodles made from whole eggs, flour and alkaline water to give it its springy texture. Jook sing noodles are rare today because of its labour intensive creation process. The noodles are commonly served as wanton noodles in Hong Kong.

The wanton noodles has a springy texture from the bamboo noodles used, but the highlight of the dish would be their springy wontons and specialty broth. The broth was sweet and very light, with bits of shrimp roe giving it a nice punch. The recipe has been handed down for the past 100 years and takes about 3 to 4 hours to prepare the noodles itself. Shrimp roe noodles (haa zi meen, 蝦籽麵) is a noodle dish where shrimp roe is added into the mix giving the dish extra umami flavour and texture. The noodles here were served dry (lou meen, 撈麵), with a side of pork trotter, mushrooms, shrimp wontons and fresh shrimp on kailan served on a side. A generous shower of shrimp roe was scattered all over the noodles giving each bit great chewy texture from the bamboo noodles with little bursts of umami from the roe. You can see why this dai pai dong has been awarded a Michelin Bib Gourmand. Definitely worth a visit. 💵 HKD83.00 (RM44.00) / serving
