Buttery tart shell topped with chopped portobello, with a quail egg with an oozy centre! Wish the chopped portobello had a more earthy richness. Didn’t think the quail egg added any value, would have preferred a larger tart and served with sous vide egg perhaps or swap the leek cream for truffle cream!
