This is the @dehesa.sg signature dish and it involves 3 stages of cooking. The tender flesh from the cheeks of the big are first braised, then flash fried then finished in an oven. Served with a runny egg yolk, the dish looks rather messy once mixed but is very delicious. The tender and flavorful pork meat with the crisp exterior and the smooth egg yolk make for terrific eating. The sauce and capers add the right touch of acidity and flavour to ensure that every bite is enjoyable. A very good dish 👌
