The amount of skill required to execute this dish is probably something else.

There's nothing particularly spectacular about the taste, because tbh it is pretty bland. But the fact that it is bland already reveals that it is well cleaned and executed immaculately so that there's no porkiness. The thick cut also had a nice bite, almost bouncy, which is exceedingly rare and difficult to get right for this thickness.

Something special, but if you're looking for a lot of flavour then this isn't the dish for you.
