Our little exploration up north brought us to Sembawang Traditional Claypot Rice, and you know it's the real deal when you can smell the charred smokiness of the claypot rice through your mask lol! We ordered their signature Traditional Claypot Rice ($8.80 for small) and it definitely did not disappoint! ⠀

The claypot was served piping hot with a generous amount of sliced lap cheong, chicken pieces and pakchoi. The chicken meat was well marinated and super tender. Cooked over the traditional charcoal stove, the rice was delectably smoky and has absorbed the marinade. Top up with more dark sauce if you're the type to have lots of sauce with the rice! The highlight for me was the bits of salted fish hidden in the rice like flavor gems. The burst of umami and characteristic saltiness provided a nice touch to the overall flavour of the rice.⠀

And we definitely couldn't miss out on the scorched rice crisps (锅巴) on the bottom of the claypot! The claypot temperature was just right so the rice did not burn quickly like some that we've had before. The mildly charred flavor and crunchy texture made a nice contrast to the overall dish. ⠀
