Because first, they're relatives of the original owner, not the OG making a comeback. As a result, I was very disappointed there was no shredded crabmeat in my noodle. They explained it's in the wantons, but I couldn't taste any. However, looking past that, this was possibly the best wanton mee I've eaten, better than the OG. Noodles were wet and flavourful, meats were serious enough to rival roast stalls and you actually care about the vegetables. Imagine how conflicted I was.
