Jook sing noodles (zuk sing meen, 竹昇麵) are a type of rare noodles made from whole eggs, flour and alkaline water to give it its springy texture. Jook sing noodles are rare today because of its labour intensive creation process. The noodles are commonly served as wanton noodles in Hong Kong.

The wanton noodles has a springy texture from the bamboo noodles used, but the highlight of the dish would be their springy wontons and specialty broth. The broth was sweet and very light, with bits of shrimp roe giving it a nice punch. The recipe has been handed down for the past 100 years and takes about 3 to 4 hours to prepare the noodles itself.
