The beef shank has too much bite, and surprisingly the original comes w nothing else except shank. The gravy is quite light, and is familiar yet different. It's somewhat similar to a Thai style in the sweetness, but otherwise quite different too. It's got the darkness but not as heavy on the palate as you expect

The chili works very well w the bowl to add on zest and heat without much else, so it doesn't detract from the dark flavours.

The tendon was absolutely magnificent, incredibly tender and that's why it's so expensive to add on

Soup was super, it's boiled w beef bones and meat so you really get the depth of flavour hardly found anywhere else. Unfortunately with this kind of broth there's always the problem of sourness, esp after you let it sit awhile.

Overall quite good, spam tendon I guess, avoid the meats, and then it would be worth a try
