Claypot rice is essentially rice cooked in Claypot with chicken (sometimes marinated), Chinese sausage and salted fish (colloquially known as "Ham Yu"); oh and throw in a couple of leafy green vegetables.

The cooked dish is then tossed with dark sauce and a sprinkling of oil into this chaos of taste. The secret to a good Claypot rice is the even-ness of the flame, timing and also the quality of the Claypot. My Favourite is still New Lucky Claypot at Holland/Buona Vista but this comes a close 2nd.
