When at Bala’s and you’re offered today’s special thosai, take it. It’s almost always a genius use of flavours with excellent execution. Last week, it was this eerily green thosai, packed with soft buttery masala spinach, peas and lentils. I love that the filling was evenly spread out for a balanced bite every time. The thosai itself also boasts a touch of spinach flavour, fragrant and somewhat ‘green’ (if you know what I mean).

Comes with the same cabbage and coconut chutneys that appear with their other thosais. Not that you desperately need it. This is one baby you can wallop on its own.
