Ending the year with a #throwback to one of my favourite lunch venue of 2018-The Naked Finn.

Despite the somewhat steep price tag, the food was more than enjoyable with a group of very friendly and attentive staff. Having the Hae mee tng ($25), the signature stock was full of prawny shiokness and just the thing if you are in the mood for atas prawn mee. Made by first frying a variety of prawns in grapeseed oil, then blended and slowly simmered with the pork stock for hours; what is left is of course a rich concentrated broth. No added sugar or MSG, the flavours were also deep in the natural sweetness of crustacean. Though to provide the soup with an extra boost, each bowl was presented with prawn oil, lard and chilli as condiments.

Therefore, an umami hit, save this bowl all for yourself as you dig into the 3 large pieces of salt-grilled tiger prawns (Penaeus monodon) and slice of Salmon Creek Farms Natural Pork Belly Roll with your choice of noodles (Japanese somen or vermicelli, or a mix of both).
