This is not only traditional to Vietnam, but more specifically to Hoi An where I was at. Thick, handmade noodles came with marinated tender pork. The broth shared some similarities with our kway chup broth (the broth that came with the kway itself), but due to the use of fresh herbs in it, it has a herby fragrance as well.
