Texture-wise, I would say that it is a cross between hard-boiled eggs & Ajitsuke Tamago (ramen egg). 🥚 Cutting through the firm egg white unveils a runny yolk that lends a nice luscious mouthfeel. 🤤🤤🤤 Liked that the eggs were greasy at all despite being deep-fried to paint that golden brown on the exterior. 👍🏻

The highlight would have to be the accompanying mama's signature chilli jam 🌶, which gives the eggs more oomph with its slight spicy kick. 😋😋😋 Served on basil leaves & tipped with sliced chilli, this was certainly an elegant way of presenting eggs on a plate! 💕
