You can never go wrong with toasted sourdough, eggs and guac. The simplest kind of breakfast easily thrown together. A little goes a long way.

The guac is very well seasoned, with the right amount of acidity and salt. Interestingly, chopped onions and diced tomatoes are added in the guac for that added texture. Also enjoyed the cotija cheese (Parmesan of Mexico) sprinkled all over, which greatly resembles feta, being mild tasting and having that crumbly texture.
