Served best at medium doneness (you can ask for well done), this was yet another dish that impressed. We’ve had plenty of Iberia Pork Chop, and this is easily on par with Skai’s! It very much depends on your mood of the day - something fusion (Marcy’s) or something more traditional (Skai’s). The Iberico were nicely slices, saved for that one piece attached to the bone. Each was tender, juicy and well-balanced in terms of meat-to-fat ratio. There was a nice char to each of the slices as well. We liked how they were so generous with the chimichurri sauce - which once again probably wasn’t quite needed given the meat was awesome on its own!
