Fluff Stack is one of those places which I kinda look forward to revisiting for their soufflé pancakes, but it seems that I just lack the fate of capturing their items in its intended plating — from nearly allowing the saucer bowl containing the sauce to land on the ground; this time the toppings of the Musang King Soufflé Pancake just slid off the pancake whilst collecting the dish from the self-service counter when I barely lifted it up — oh well ...

Available only from Monday to Thursday, the Musang King Soufflé Pancake is so elusive that it warranted a visit to Suntec City after work (because Fluff Stack and durian 😆) — the item features their standard soufflé pancakes served with a light pastry cream (possibly durian-infused?), durian mousse, sago pearls and Gula Melaka. Whilst sounding like a heavy and decadent combination, I was pleasantly surprised by its “lightness” when it came to the textures involved — perhaps something got to do with Fluff Stack’s well-executed soufflé pancakes that are light, airy and fluffy akin to a soft, pillowy chiffon cake; an eggy one at that. The scoops of durian mousse came in small balls; coming on the side of the soufflé pancakes, atop the top layer, and in between the two soufflé pancakes — a little bit on the sweeter side of things but did come pretty rich and pungent of the distinct notes of the king of fruits, with fibres of the fruit being felt within. The sago pearls provided a good bite; the addition of the Gula Melaka seemingly trying to provide a slight Peranakan fusion somewhere, while the light pastry cream bridges the various elements such as the soufflé pancakes and the durian mousse together.

Not sure if it is how I am starting to feel a little old, but I thought I would have enjoyed this slightly better if it was a little less sweet — perhaps the addition of Gula Melaka to the already sweet durian elements proved a little too saccharine for me. That being said, I do feel that this product would appeal to the wider audiences — durian lovers who are into creative approaches to the fruit will most likely love this; it’s not particularly heavy on the pungency of the fruit, but does function well as a dessert nonetheless. Next on the list to try at Fluff Stack — the Pistachio Sicciliano Soufflé Pancakes ...
