Chef Martin Foo has created a series of festive dishes for this CNY, with his progressive Chinese cuisine characterised by innovative touches. Here's some highlights from Crystal Jade Palace's CNY Menu:

1. Pan-Seared Lobster with XO Sauce on Yuzu Noodles (cover photo) - succulent lobster with a crisp sear was served with noodles well infused with the yuzu flavours, then topped with some housemade XO sauce.
2. Grilled Iberico Pork Collar, 荫豉烤西班牙黑毛豚, ($30 per portion, 2nd photo). Traditional char siew is elevated with the use of Spanish pork, then grilled with a mix of honey char siew sauce and black bean sauce.
3. Crispy Hokkaido Scallop, 发财黄金百花酿元贝, ($16.80 per person, 3rd photo) which is stuffed with black moss prawn paste coated with salted egg yolk, providing a delightful burst of flavours and textures.
4. South America sea cucumber, 大蒜爆炒南美洲刺参, ($38 per portion, 4th photo) is unassuming but redolent with ‘wok hei’, skillfully stir-fried with scallion and leek.
