You don't get this at many restaurants so it was a real treat.
First, a large wooden board laden with different types of French cheese was carried to our table. Then a French member of the staff (who's the resident cheese expert) did an introduction of each one. After which we were asked to select the cheeses that caught our fancy and he proceeded to cut a piece from them. After carefully arranging the pieces on a plate, he advised us on the best sequence to eat them. This was to allow our tastebuds to fully appreciate the mildest cheese before we moved on to the strong ones. My favourite of the lot was the semi-hard Tete de Moine while my friend couldn't stop raving about the goat's cheese.
