[Somerset] This is still my go-to combination: the Green peppers with Limbo fish ($45.90), whose softer, tender flesh I much prefer over the firmer, meatier texture of the Qing Jiang fish.

I love the complexity of this saucy broth, which strikes a delicate balance between salty, spicy and sour from the green peppers and green Sichuan peppercorns, finishing with that satisfying tinge of numbness on the lips that the famed Chinese cuisine is known for. You’ll also be glad to know they no longer charge 50 cents a packet of tissue. @tanyu_sg
