Until I had this creation from Jiang Nan Chun.

The texture-perfect almond cream is the highlight of this creation with the subtle flavor of salted egg yolk lingering on. Worth mentioning is that the salted egg yolk is used to create the crispy exterior. Technically very accomplished, this creation is an absolutely triumph!
