Truffle Samgyetang ($46++) Exclusively available at Song Gye Ok as a collaboration with Modu. Whole young chicken is slow‑cooked for over 12 hours in ginseng‑infused broth, with ginseng root, glutinous rice, leek, jujube, chives, pine nut, and truffle. Real truffle is shaved right in front of you. The flavour is heavy, deep and earthy, yet clean and pure. Chicken was soft, tender, and easily torn apart. Served with banchan, salt and pepper, a shot of ginseng drink, and an additional bowl of sticky rice. I appreciated the explanation for this dish, it added context and made the experience more complete.
