Claypot Red Wine Chicken ($14)

A rather uncommon dish found on local restaurants’ menu as this Claypot Red Wine Chicken’s reparation is just too laborious and for those who do serve this dish, it is tough to find one which would rival the version available @SingapuraSeafood restaurant. This is commonly served as confinement food for newly minted mothers for its nourishing benefits and the red hue comes from the fermented red glutinous rice. Here, the claypot of soup was served piping hot and extremely rich with the lingering taste of the rice wine which didn’t overpower the dish. For once, I actually enjoyed slurping up the gravy. The chicken was also well cooked but the star was really the red wine gravy.

Fragrant Crispy Duck ($26/half)

No chickens were hurt in this photo since we’re having Fragrant Crispy Duck @SingapuraSeafood restaurant 😂. This duck is probably one of the best I have ever had and if we were talking about level of crispiness. Short of comparing this to peking duck, I dare say that I’ve had none crispier thus far. The duck meat was moist and paired well with the plum sauce but it was really that well seasoned and extremely crispy skin which won me over. The owner revealed that they only used fresh live ducks for this and everything was done from scratch as they took great pride in ensuring the quality of their dishes.

I blame myself for not having learnt about this retro establishment that seemed stuck in a time cycle that dates back to the 90s with its cheena restaurant music and cream coloured tablecloths. Sadly, it would be shutting its doors for good after this weekend as the owner would like to enjoy their retirement years after slogging hard with the restaurant for decades. I strongly urge foodies to grab the opportunity of these last few days to appreciate their swan-song while still possible. They are selling their recipes of their top dishes so I’m hoping some rich soul would do everyone a favour and revive these dishes for all to enjoy!

@singapuraseafood your fried pomfret thai style - in my opinion this is a fantastic dish. Well prepared and fried to crisp yet tender inside. It is unlike the usual drenched with sweet and sour sauce as it is accompanied only with a thai style salad. So the idea is likely to taste the freshness of the meat. But personally, I do find steaming to be better in savouring the taste of the fish. Still a fantastic dish. Would (still) prefer to have a bowl of sweet and sour sauce for dipping 😂🐳 MerRyan is very happy! #burpple burpple #merlion #merryansg

The chicken is cooked in red yeast wine till the meat is infused with the tangy flavour and fragrance of the red wine.
The chicken remains tender and chewy after long hours of preparation, savour it with the springy rice vermicelli for a sumptous finish.

Each dish is conceptualised and prepared by the head chef and one will rave non stop by how amazingly tasty they are.
There is plenty of chewy, succulent meat on the ribs that is incredibly appetising when coated with the flavoursome honey sauce.
