I like that Stateland tries to do something different apart from the usual cafe (read: boring) stuff. Here, a generous slab of salmon is cooked to pink succulence, paired with bouncy Korean glass noodles in a yuzu-inflected broth. What surprised me was the use of fresh dill, which immediately took the flavours off the charts. Great for a light, yet immensely flavourful option.
Really enjoyed this with an interesting layer of fluffy egg foam with a sweet-savoury broth beneath it!
4 munchies: The Isaan-style otak-otak is one of the must-order dishes at this HDB-based eatery that serves authentic Thai cuisine. Made with mackerel, squid, prawns, eggs, Thai red curry paste, and coconut milk, the full-bodied flavour of the fish paste was excellent. The pudding-like texture was creamy and so fluffy; spices were well-balanced. Aesthetics aside, serving it in a coconut husk with flesh also gave that extra sweetness to balance the richness of the dish! #Burpproved

The mains at Wheeler's Yard seems to be more of their forte than the desserts; the Yuzu Creme Brûlée came strangely with Matcha ice-cream and Azuki Beans over the top. The Creme Brûlée came with a thin, crackling layer of sugar over the top which was decent enough though much of the Creme Brûlée is flavoured by the zippy flavours of Yuzu. Sadly, most of the flavours get overwhelmed by the Azuki red beans and the Matcha ice-cream adds a whole lot of confusion in terms of flavour to the Yuzu Creme Brûlée. Perhaps this would be better if the Yuzu Creme Brûlée is left alone with candied Yuzu bits over the top for a simpler concept.
