So simple, so fresh and so perfectly executed. Cutting right through the crispy pastry, each mouthful has uni, crab and an umami rich sauce and some of that buttery, crispy pastry. Others might have already said this, but this is @lollapalooza.sg's perfect response to @lollasg's sea urchin and squid ink pudding. Keep doing this call and response thing and I will be at both places catching up with their creations.

The whole reason why we actually wound up here for lunch, especially after seeing those photos that made us even more curious about it! This isn't anything like what I have had before so far; the umami-goodness is just simply overflowing from the fresh Sea Urchin down to the crab-infused tart. Just imagine flaky and buttery pastry filled with fillings much similar to an egg tart but full of crustacean flavour, and with shreds of crab meat within that gives it a chunky bite. Really interesting and mindblowing indeed!
Meet Lolla's Sea Urchin Pudding counterpart from Lollapalooza. The super smooth custard sits on a buttery and flaky pastry topped with generous chunks of crab plus luscious sea urchin lolling over the top. Love the refreshing finish of lime zest confetti, though I wished I could squeeze a teenie weenie bit of tangy lime juice to counter all the savouriness. Regardless, this was absolutely delish and you should order it stat!
