It’s rare to see a Steakhouse that serves Mutton Chops, not Lamb but Mutton. I don’t really see it anywhere in SG. The Pioneer & most Prominent one will be Keens Steakhouse @keenssteakhouse at NYC with their Legendary Mutton Chop. It’s aged between 12 & 16 months which are considered "yearling mutton". Cut from whole loins, it’s well marbled & not dry aged per se, since it takes weeks, the Lamb pick up some subtle flavor notes from the time it takes dry aging in the Meat Cellar. 🔖
