Chef Derek, who also runs his private dining concept Twelve Flavours, is putting together a stellar selection of signature and exclusive dishes in this menu through quality and unassuming ingredients. To go alongside the food, there is an option to pair the dishes with natural and classic wines from France, Portugal, and Australia.

For Fridays, Saturdays and Sundays, diners can get to enjoy the 6-course wine pairing set dinner ($208++) starting off with a snack of kueh pie tee and grilled meatball before the first course of Chawanmushi which contains crab, topped with ikura and finished with some yuzu ponzu and wasabi to give it differing layers of flavours. Diving into the second course is the Hokkaido Scallop served on a blend of ramson, kalian and asparagus with textures from the fave beans.

The third course of Black Cod was beautifully executed and to pair with this delicate piece of fish is a beurre blanc cooked with razor clams and an additional top-up of caviar. The subsequent Pork Jowl is fork tender, served with slow-cooked cabbage ragu before a palate cleanser and finally the dessert of Roasted Banana. This final course features a homemade eggless roasted banana ice cream with thoughtful accoutrements of chocolate, peanut and coffee.
