Piece Montée The texture, the lightness, the on-the-point crunchiness of the profiteroles reminded me of those I had in Paris, and even possibly better.

The flavor of the matcha is complemented by the double French caramel that was used to stack the spot-on textured profiteroles. The base of the profiteroles are filled with vanilla mascarpone cream. Technically very accomplished, it was a dessert well done!

Finally made it to @madaboutsucre to try two of their new season cakes.
NOIR
Grapefruit, Black Tea, Bergamot, Mandarin, Yogurt Mousse.
Classic Slow-Cooked Oxtail with Burgundy Red Wine Sauce 👍🏼 Looks like a dainty serving, but so filling.
Unexpectedly our favourite dish from one of the previous menu was ribeye of hormone-free pork on bone with sauce of French pommery mustard.
