Lechonsita - Our Signature Suckling Pig, Tomato Relish ($42/ 100gm): Another taco-esque number. Prepared with chickpeas, sofrito, cooked onions, vegetables, and Iberico pork, the rich-tasting protein was exceptionally done - good by itself, even better with the condiments. I wish there were more skin crackling, though!
Arepan Conejo - Braised Rabbit, Bacon, Parmesan, Cassava Wrap ($38): Much like a punchy pulled pork taco with the flavourful braised filling. It didn’t look like much, but the sauce was stellar. Very savoury and the rabbit was superbly tender!
Sopa Langosta - Lobster, Avocado, Sweet Corn, Potato Soup ($50): I was honestly expecting more from this pricey bowl. The soup felt more like a sauce with its consistency, but the flavour was a little mild, as most of the sweetness came from the slightly charred corn hidden at the bottom. Kept fairly raw, the lightly poached lobster was nicely executed, though - succulent and fresh-tasting with that sashimi quality.
Bocados de Tiradito - Sawara Ceviche, Leche de Tigre, Lime Pearls ($22): A fun bite made with chunks of fresh Spanish mackerel, citrusy leche de tigre and popping lime spheres stacked on crisp kueh pie tee shells—vibrant and light bursts of flavours.
Pan de la Casa - Signature Homemade Rye Bread ($8): Even better than I remembered! What a treat! I first had the glistening fermented mushroom-glazed house bun at the Food Garden Asian Square Tower 1 stall, ‘Boronas,’ and now I've had it again at the Colombian restaurant. Love the warm, umami rye bake with the flavoured butter~
