Quality red tea leaves, Szechuan peppercorn, aniseed, cinnamon, cumin seed, are used to marinate the duck for 4 hours, and air dried for 6-8 hours to tenderize the meat naturally before it is steamed, then smoked in comphor wood charcoal with orange peel, lastly, hot oil is bath onto the skin till crispy
