I lived in Singapore during the 90s when Japanese food was rare to none, especially with authenticity. Shiraishi-San is the OG chef, trained at Nogawa, in delivering top quality and authentic craftsmanship to Singapore.

While we ate lunch, the nigiri was spot on and the atmosphere wonderful.

If you want to experience the OG Endo-Mae sushi in Singapore, this is the place.

Must go for any Sushi lover in Singapore.

Even though this is primary a sushi restaurant, they do a fine rendition of tempura, though on the pricy side.
Shiraishi is named after their owner, Mr Shiraishi Shinji, who has served the finest sushi and sashimi with pride for more than 12 years.

Because it's recess week and our only chance to indulge in a slightly fancier lunch in the next few weeks, we decided to head to Shiraishi, a mainstay, under-the-radar traditional Japanese restaurant located within the Ritz-Carlton Hotel. Even though it wasn't top-notch sushi, we came away satisfied and well-fed. My favourite pieces here were the ootoro and ikura.

The sushi here is always fresh and satisfying. Portions for set lunch are just right as well.

Horse mackerel sushi that we couldn't help ordering after seeing the cuts..
