Finally got my lazy butt to Towa for their daily limited Tsukemen on an off-day. Available only during lunch, the Rich Tonkotsu Tsukemen with Special All Toppings ($24) was quite the solid bowl. Expect springy noodles, accompanied by two slices of flavourful torched charsiu, two slices of special charsiu, nori, crunchy sweet cabbage, a ramen egg, menma, and an umami dipping broth.
I love the succulent and smoky charsiu a lot - it has the perfect fat-to-meat ratio, which I had to stop myself from inhaling! The special charsiu was tender as well, but a little bland on its own, so I found it much better after dunking it into the dip. The fish broth was rich yet not cloying or overly salty. The slurpy strands of noodles were beautifully al dente too, and held the sauce nicely. As for the condiments, the bonito powder and their house vinegar are a must. I don’t usually do vinegar, but adding it really brightened the dish.
