I didn't think this was entirely terrible, but it needed a lot more chilli crab to balance out the ratio of filling to bun. And it arrived at my table cold – not very palatable for anything that's deep-fried (except fried ice cream).
This Asian version of arancini has short-grain rice soaked in chicken stock (read: liquid fat 😱) with ginger, pandan leaves, garlic and shallots, then shaped into balls and deep-fried in breadcrumbs – I thought the rice was a little too mushy and needed more salt. The green chilli sauce on the side, though, was a winner.
The half-grilled salmon was done quite nicely, though it tasted a little flat and needed more seasoning. The cha soba twine, too, though pretty, made it a little messy to eat.
