Seasoned with fish sauce, this carries bold smoky eggy savoury sweet salty briny flavour. A tad on the greasy side. The lime juice infused chili helped contrast nicely with its spicy sour zesty tangy kick.

We ordered a small plate of Oyster Omelette ($5) to try and at first glance, it looked like a textbook-perfect Orh Luak - generous amount of egg (we secretly counted about 5?) well-balanced with the batter, and garnished with parsley. The first few bites were shiok as there were a lot of eggs latched onto the batter. But after a few more mouthfuls, it got a bit jelak as it was greasy. It was hard to miss the layer of oil sitting underneath the Orh Luak.

Was a half an hour wait, so we went straight for the bigger $8 portion! ๐ Itโs a similar style to Simon Road Oyster Omelette, with a good ratio of crispiness to gooeyness, but I kinda prefer Simon Roadโs a touch more for itโs a bit more savoury. Oysters were fresh and came in a good number, and the chilli helped in lifting the flavours.
Heard that Ah Chuan Oysterโs opening hours are sometimes by luck, but when they are open, they have a steady queue. Aunty was very friendly, but youโve got to be prepared to wait.
The orh luak ($5/$8) had a good blend of egginess and starchy chewiness, amidst gratifyingly crispy charred bits. It was moist but did not feel greasy at all.

The oysters were also juicy and plump, and the chili had a good amount of zest to cut through the heaviness.

Saw a long queue there and true enough, discovered that this is a very tasty dish. It wasn't too wet nor too dry. The real deal is the sauce. Note that this is the slightly more crispy version. Up to individual tastes really but I guarantee you'll regret getting only that $5 portion to share
Good orh luak is rare to find in Singapore. This stall makes a decent plate of orh luak. It is crispy and the oysters are plump (but I think I ate one stale one and so I changed my mind about wanting to order a takeout for my Teochew parents for snack). The uncle fries this fast so there is not much waiting. Prices $4,5,8. Opens at 1 pmรท. Not sure about closing time.
As it opens at a very odd timing (open everyday except for Tuesdays from 3-6, but they usually sell out by 5.30), I've had countless times where I've missed out on eating this wonderful orh luak (fried oyster). But today I have finally caught a taste of it! Still wonderfully crispy and bursting with savory flavor, the 6 fat, juicy oysters they give for a $5 plate make every bite of this dish an absolute joy. Their chili is spot on, being sour enough to cut through the grease without being harsh on the palette, and a mild spicy kick that haunts you. Even better is that while almost every other orh luak seems to be plopped atop a plate that's so flooded with oil it could very well be a Saudi oilfield, Ah Chuan's orh luak goes easy on the grease. The easiest 10/10 for Ah Chuan and his magnificent oyster!

Ah Chuan Fried Oyster is operated by a potbellied, beer chugging uncle whose opening hours can be best described as agar agar between post-lunch hour and whenever they sell out their oysters during dinner time.
Be however to be blown away by their orh luat if you manage to catch the uncle at work. I prefer their moist yet crispy version to Simon Road's crispy version which tends to get oily and gelat after a while. Their oysters are probably the most plump and juicy i have had at a hawker stall.
It's kinda out of the way unless u drive or live in Toa Payoh but is definitely well worth the hassle of a visit.

Ah Chuan had been widely blogged as one of the best locally, though I used to agree until I discovered there are many more good ones in SG. For the record, Ah Chuan's undoubtedly shined in its nostalgic taste but I could quote Hup Kee's at Newton FC as my preferred for its great balance of starchiness and crispy edges.
Nonetheless, Ah Chuan would always be sought after b'cos of its limited availability (the same idea of limited edition). The stall hardly operated 3 hours a day, starting only after noon lunch period and ending as early as 4pm sometimes. Final note?
