Established in September 2003, this chain of hawker stalls is known for sourcing their mutton from Australia or New Zealand, stewing the bones over hours to flavour the hot soup / broth.

Their rendition has a semi-cloudy semi-clear light soup / broth, enhanced with ginger, coriander, dang gui / angelica root, and other herbs. Carries mild meaty savoury sweet bitter herbal flavour.

The deboned mutton meat is tender with meaty savoury flavour, the bouncy mutton meat balls have meaty savoury salty flavour, and the stomach / tripe is springy crunchy with savoury sweet herbal bitter flavour. Served with white rice.

A generous serving of mixed mutton! Soup was flavorful w a strong presence of herbs. A perfect, hearty comfort lunch ❤️

The taste was a combination of Chinese herb and spices and fresh mutton.
By controlling the done-ness of every different part of the mutton, they gave the dish a comfort texture. Neither of the ingredient had a chewy gum - like texture. Awesome!
