Sat short meeting with the founders of Ryan's Grocery has left me in awe with their delication to their son who has special dietary needs. Because of their love for Ryan, they started sourcing for food in Auzzie that is suitable for his dietary needs. Hence, many products here are from micro producers. These bak kwa uses the premium Australia’s @borrowdalefreerange Carbon Neutral Pork. This pork is the first 100% Carbon Neutral Meat Producer in Australia. In addition, Borrowdale animals are reared on APIQ Certified Free Range farms that focus on animal welfare as well as sustainable farming practices.

In terms of taste, they are flavourful, tastes more porky, less gamey, and has a floral scent in its fats. A colleague was spot on when she tasted it, saying it has this "special fragrance". Being free range, the pigs have their own time and space to live like pigs should - sleep 70% of the time, and laze around in mud when they feel like it. Indeed, the bak kwa tasted more tender.

Pictured is their Christmas set good for six to eight person. It includes succulent Ryan’s Honey Baked Ham (1 kg), U.S. Black Angus Beef Ribeye Roast (1.5 kg, $188 as ala-carte, third photo) and Classic Roast Turkey with mushroom stuffing (4.5 kg, $148 as ala-carte, second photo).

The Black Angus ribeye (third photo) uses only premium grass-fed and certified organic Australian Hereford Beef, and prepared with a moreish Mediterranean marinade before being slow-roasted for 45 minutes. This renders a lusciously caramelised and charred exterior.
