A refreshing cocktail with highland blanco tequila and grapefruit tarragon cordial in a citrus blend containing spiced salt and absinthe.
This is one drink in Idlewild's larger format Cocktails La Cérémonie that celebrate ritualistic serves native to different parts of the world, ideal for large groups, or a party.
The other Cocktails La Cérémonie they serve is Cream Soda Caddy ($95) that serves 6 to 8. Yes, ideal for parties!

The cocktail menu at modern retro-luxe Idlewild is inspired by the 10 cities along the transatlantic route using artisanal spirits sourced from small batch distilleries from each of these cities. Each location is also represented with at least one tapas-style bar snack (from S$15++) including Atun Chifa, Duck Rillette and Avocado Fries that draw inspiration from respective native cuisines.
I've tried more than half the available tapas on the menu, and I particularly enjoyed this Atun Chifa inspired by Lima, Peru. You have raw yellow tuna in sesame oil and soya sauce, served on crisp thin wonton cracker. This Peruvian tapas is particularly amenable to the Asian palate.

The cocktail menu takes you on a whirlwind trip around the world, showcasing tipples inspired by cities ranging from London and Paris to more exotic locales such as Havana and Lisbon.

Located on the ground floor of Intercontinental Hotel in Bugis, this snazzy bar with lovely service and a travel-themed menu serves elegant bar bites and 20 signature cocktails inspired by 10 cities on the Transatlantic route. Take the Journey of Limun for example, a fizzy blend of lemon and strawberry sherbet, bianco vermouth, bruto 'bitter' and prosecco inspired by Rome. Pair your drinks with the Fish and Chips ($18), featuring expertly battered cod fish fried to golden brown crunchiness and served with shakers of malt vinegar and salt.

Don’t expect the typical style of serving for the pasta here. There are only three pieces in the plate but each is a delightful mouthful. The al dente pasta parcel is stuffed with roasted hazelnuts, blue cheese and bechamel and cooked in a brown butter sauce.

The fish was cut quite small, almost the same size as the chunky English-style chips, then battered and fried to a golden-brown crunchiness. That made it easier to enjoy it as you can fork each piece up at a time while holding your drink in the other hand.
What we loved too was that the dish came with all the classic condiments of malt vinegar, sea salt and lemon so you can season it exactly to your preference.
