This September, the Alaska Seafood Marketing Institute is partnering with some of Singapore's top restaurants to showcase the quality and sustainability of wild Alaska seafood. I had the pleasure to try them out at 15 Stamford.
The meal began with the Pacific Cod Brandade Pi ($45), a creamy delight with black salsify, parmesan, and sourdough rye that soaked up every bit of flavor. Next up was the Sockeye Salmon En Papillote ($50)—perfectly cooked, fresh, and zesty with fennel, orange, and dill butter. The Pacific Cod Fish & Chips ($55) was a standout, reimagining the classic with tender cod, mushy peas, hand-cut fries, and a refreshing citrus tartar sauce.
