Judging by the plating, it appears that chef and founder Issac Lim’s restaurant days are not far behind him. This zesty dressing, which is available with a $1 top-up, will certainly lift the senses with its lemongrass notes, but not overwhelm the natural flavours of the fish.

The HK-Style Pomfret at Niannianyouyu ($6.50) is one of the most popular choices, with multiple customers having at least one plate of it at their table. Before you celebrate too much – each portion consists of half the farmed golden pomfret. Still, it’s a pretty generous portion, and the dressing of soy sauce, chicken stock, garlic, and ginger, is comforting and fragrant. A little plain for my liking but, it goes well with the sweet and firm pomfret.

There are a few must-try items when you visit Tolido’s Espresso Nook. The much-raved-about Rosti ($18 – $22+) is cooked to perfection with gloriously crisp strands on the outside, and waxy ones on the inside. The sour cream lifts the oiliness of the potatoes, and the accompanying smoked salmon and sausages add a touch of umami, though I daresay the rosti is perfect on its own.

While the golden crispy skin is delightful to crunch into, it is however let down by the dry meat within. A touch (or a few) more of moistness in the meat would have done the trick.
