Basically vermicelli stir fried until it has a crispy layer. Look at that texture! Though it looks kinda plain and non-photogenic, it was packed with flavour. I think it was cooked with some seafood stock/gravy, that was the flavour I picked up. They also had other excellent dishes, though make sure to make reservations, the queue could get unbearably long!

Be sure to order the White Pepper Crab ($64), as well as their Garlic and Chilli La La (from $16) that sees wonderfully plump clams coated in a spicy sauce. Wash it all down with some beer for ultimate satisfaction!

Consistency issues aside, it’s still a tasty plate of noodles that I wouldn’t mind having for breakfast, even though crispness is their entire schtick.
