Bringing over 25 years of experience to the kitchen, Chef Tan-San’s journey began after a stint in 🇯🇵, where he mastered the art of Tonkatsu and returned in 1993 to helm the kitchen of Tonkichi. In 2004, he took on the challenge of setting up Tampopo as the Pioneer Chef, and eventually famed for numerous creations. Finally in 2016, @hajime_tonkatsu_ramen is born, bringing us authentic Japanese cuisine in a modern setting and at affordable prices.

Probably one of the best tonkatsu pork I’ve eaten in recent memory. Perfectly deep-fried, it was really crispy yet light and not too greasy. Honestly for the pork, I couldn’t really tell the difference between the two sets as they were both so so good. Fresh, succulent & toothsome! But of course if you like the fatty ends that keeps the cutlet juicy, go for their Premium Pork Loin. 😋👍

Special mention goes out to their Tonjiru Soup - Tonkotsu broth simmered with Japanese pork and a hint of Yuzu for over 12 hours. The free-flow cabbage served here was really crunchy and refreshing too!

Fantastic tonkotsu, with a perfectly deep fried crust which was both crispy yet light. Couldn’t really tell the difference between the two sets (which comes with free flow rice and cabbage, of which the cabbage is delightfully cold and crunchy, none of that sad lettuce stuff), except that the miso fillet came with miso sauce at the side, which was quite a good accompaniment to the tonkotsu.

Tender and juicy, this is quite an epitome of quality marbled meat, Japanese Air Flown Sangenton Pork.

To retain the premium meat’s freshness, no pre-seasoning or marination is done and meat is breaded with fresh bread crumbs upon customer’s order. Unlike most Tonkatsu shops, Wafu instead of Goma dressing is used. It makes a better compliment to the fried loin due to its lighter taste, giving an overall balanced taste profile of the dish. And yes, the loin is neither too oily nor gamey, perfect for even non-pork lovers.

Found one here tonight. This Premium Pork Loin Tonkatsu ($21.90) has all the elements of a great one - panko breadcrumbed exterior that is crispy and light in every bite, before yielding into the succulent pork meat that is a good mix of lean meat and a thin layer of fat to provide that juiciness. You know it is a good tonkatsu when the crispy exterior still sticks on to the remaining meat with every bite, instead of falling apart.

The chef has over 20 years of tonkatsu-making experience, a good part of which has been spent making tonkatsus at the famous ‘Ts and Ts’ of tonkatsu eateries here. ;) Not eaten many Tonkatsus before, but I know a good one when I bite into one. The icing on the cake? The place absorbs gst, so what you pay is what you see on the menu.

Who would have thought that within this neighbourhood you can get such delicious tonkatsu. Chef Tan has over 20 years of experience as a tonkatsu chef, and was also the one introduced the popular Tonkatsu Ramen and Black Pork Tonkatsu at Tampopo.

Premium Pork Loin, a carefully selected cut which balances the right amount of fat and meat, is coated with special panko thus ensure you get the flavourful yet juicy tonkatsu without that greasy taste. And with free flow of Niigata rice and thinly shredded cabbage, it's just value for money!

I had the premium pork loin and the pork was soft and tender. I did find it to be a little too oily so perhaps the pork filet will be a better choice for those who doesn’t like fats. Gyoza is decent. Skip the ramen.

One of my favorite tonkatsu joint is at Serangoon Gardens myVillage, with Chef Tan-San personally running the kitchen and ensuring that quality is always consistent.

I love the crust that was light, crunchy, and not greasy. As for the meat choices, I like this premium loin cut for its juiciness and tenderness.

I was told that they use Sangenton Pork air flown from Japan and that each piece of loin was tenderised and breaded only upon order. The crust was made using fresh bread crumbs, and Chef Tan-San uses a special technique to drain off the oil from all Katsu as much as possible to rid the greasiness.

I also love the tonjiru soup which came in the set, it has a strong taste of yuzu. And don't forget the cabbages! You get free flow rice and cabbage, and I asked for my refill of cabbages twice :)

The taste is rich and unique bcoz it’s bolstered with Red Wine & Tonkotsu Broth!
Make a quick dip into it then it’s nice to go.
The set comes similar to the Premium Pork Loin (rice, soup, pickles, watermelon, roasted sesame with goma)
This is another tasty menu for your Tonkatsu style.

They use fluffy Niigata Rice that grown in pristine water from melting snow.
And also, fresh special imported panko that makes the crunch long lasting.
Everything is made with high technique by Chef Tan-San (The first Tonkatsu Chef in Singapore).
You can expect less oily and perfect level cooked tonkatsu here.

First, you will get to grind the black sesame seed to make out the fragrance and pour the tonkatsu sauce to dip with.
There’s also a dab of mustard (that i like so much).
This set is come with a very tasty Tojiru Soup (consist of 12hours simmered Tonkotsu Broth, Japanese Pork, Carrots, Radish, Burdock Roots, Konnyaku, and hint of yuzu).
This is definitely a satisfying set.
