Inspired by chef's Indian heritage is the "Palak Paneer" Risotto with Pan Seared Scallops, served with paramsen and ricotta cheeses. There was a silent at the table followed by "wow this is really good". The infusion of the different palak paneer into the risotto simply elevated the whole dimension of the traditional risotto dish.

Love how the earthy flavours from the mushrooms shone through the pasta shell. It can be a lovely pasta dish by itself too.

Creme brulee is quite common but spiced with saffron is an unique take to the classic dessert. It even comes with crushed pistachio, rounding it off with a nutty finish.

This was the main course for the night, featuring a Duck Confit which was really tender and juicy that I fell in love with it from the very first bite. Fyi, I don't usually take duck meat very well! .

The duck is marinated with cumin powder, and red wine reduction is also used. I love how I could distinctly taste all the different components, yet all of it seemed to come together harmoniously☺️

The dish is also accompanied with Truffle Potato Foam, which had a delightfully light texture, along with an assortment of glazed vegetables.

1️⃣To start off~ we had this Quinoa crisp with sago which was really refreshing and made a good appetiser. Definitely a great way to start the meal!

2️⃣Potato and Leek Soup with Truffle oil- This dish was particularly interesting because the soup is pumped into your glass using a special equipment which made the soup foamy and real light so that you won't get jelat from the richness of the taste. It was so good that I just had to go for seconds!😋

3️⃣Eggplant and tomato caviar

Being not much of a fan of eggplants and tomatoes, this dish surprised me with how good it tasted. I loved the pastry base that it was set upon, which reminded me of the crisp and flaky outer layer of croissants. .

4️⃣Truffle Ravioli

This was actually one of my favourite dish of the night! The ravioli is handmade by the chef. Its cooked to a perfectly al dente texture and the strong, buttery fragrance that hit my senses as I popped each little dumpling into my mouth was so heavenly (and sinful😝) Also, just look at that heap of black truffle 😍 .

5️⃣Chocolate Mousse

Of course, no meal is complete without desserts! This chocolate mousse was right up my alley. The chef uses high-quality belgian chocolate (54.5%), result in a smooth and chocolatey cake sure to please dark chocolate lovers. Encased within is The combination of mango and chocolate was one that definitely agreed with me😋

Last post for this amazing tasting experience with @fussyducksg thanks to @singaporeeats☺️ I want to showcase some behind the scene moments of this gastronomy journey! Behind every dish on the table is a long process of preparation, testing and planned asethetics👨‍🍳💕from where the food is sourced each cooking technique used are all knowledge/skill any cook deserves praise for✨ The sharing of such knowledge and stories through conversations around the dining table is what I love bout food tasting sessions☺️ some quotes from the tabletalk😂 if you don’t cook, you can’t truly critique/judge/understanding any dish - cos can you cook better? 🙃
