One of the must go place for authentic Cantonese cuisine & dim sum Singapore, I am excited that Hua Ting Restaurant @huatingrestaurant.ohs located at Orchard Hotel Singapore @orchardshotelsingapore has launched the Chef’s Spring Selection Set Menu that features their signature dishes as well as seasonal specialties.
The Chef’s Spring Selection Set Menus are available on weekdays only:

What I had is their Set Lunch Menu that consist of:

The skin was stretchy and mochi-esque, the filling is decent but not the quality you expect at an almost Michelin establishment
Nonetheless, I still enjoyed it very much for the brilliant use of celery, the fragrance is very strong
Overall most of their dimsum that we had were strong, if I could come again I would order 3x siew Mai, 1x hargow, 1x cheongfun if there's other meat fillings and the hotplate carrot cake
The bamboo pith got this weak bite, not really thing. The fungus was fine, but it's not very seasoned at all and not very flavourful.
The cheong fun has this very unique soft sticky texture, as in it sticks to itself when you bite but not to your teeth
Would have been a lot better w their previous fillings instead of this
The bun was good and the lava had a strong salted egg taste, not the usual sweet kind. I prefer this type of more savoury styles
Very juicy, multitudinous amount of ingredients inside that all contributed to the texture.

The bun was quite fluffy if abit thick, the filling could have been abit more, but the balanced filling with nice strips of meat could have been abit more
One of their signatures. It's fluffy inside and crispy outside, and very clean tasting yet there's enough umami somehow.
Their chili jam is very good, there's more complexity than normal. And it does go very well with this fried turnip cake with balanced seasoning
This traditional dish has no ckn inside, there's a story to the name.
The pork skin has some oil, it's got a somewhat firm texture. With the liver and bakkwa on top, it's quite an interesting combination, but the taste is average. For 32++ no less
The mango taste is pretty muted, there's more mango than ckn, which makes the dish work cos it's not too weird, but at the same time the harmony comes at the expense of character, the dish simply doesn't taste like much
Is still a crowd pleaser though with its sweet and slightly sour flavours

The place is really hard to find, it's not very accessible too so please try to reach 30mins before (to account for time wandering about). It's in orchard hotel, which is accessible from orchard road through orange grove road. Don't walk from claymore connect side it's damn confusing
Proper, proper wagyu. It seems like it's clearly A5, the quality is undeniable (although I'm well aware A4 and A5 are basically indiscernible esp if the former is esp high quality). Beyond the slippery tenderness of the beef though, the alcohol taste is very strong and the balance of the dish is not very good, there's too much bitterness. Portion is not very big, it really is for 1.
Overall:
Guys rmb to wear long pants and covered shoes!!! They're very strict on this and that's ok but what annoyed me is how late they informed me(the same afternoon, when I left house alr). It's not communicated anywhere else.
Food's good, but not stellar. So its quite overpriced. Considering the ingredients it's reasonable I hope but I wouldn't fork out this much for this standard. We had 15% discount cos of DBs but otherwise it's even more tough to swallow. Service is nice though, there's an older guy from msia and he's very knowledgeable and very polite(offering us to just cover our legs w pants instead of forcing us to change into them) and a younger lady from shandong(Zhang xin) who's damn naturally funny
The jelly had this very unique mild taste, very familiar but can't pinpoint exactly. Maybe it's just from the wolfberries who knows
The pastry was textbook, crumbly and buttery but not too sweet nor greasy
The pudding is really super soft, it's almost liquid. The bean taste is strong but surprisingly the avo taste is barely there.
Almonds add much complexity and the fruits work well too. Despite the simplicity this was utterly amazing and was my favourite thing here.
A must try if you're here
One pax portion is 2 slices of fish. Honestly pretty tiny and pricey but the fish was of very high quality, meaty and bouncy; really satisfying big bites. The konnyaku rolls were great too. I didn't like the broth tho, it's creamy but the underlying heat from chili and gingers threw me off abit, plus it's not strongly seasoned(it is balanced though). Maybe I was expecting 酸菜鱼 and this was different
Worth the try if you're happy w the price
They use good quality honey because it's not particularly sweet but the honey is really perceptible. The glaze is more savoury than sweet though.
You can tell it's good quality pork, however it's lean and it's stringy, even though overall the texture is alright.
Well the thing about atas char siew is that each one tastes different so they're all worth trying for curiosity, though I wouldn't say for the taste itself this is particularly worth the price.
Verdict:
Some ppl say it's sh some say it's good, I guess it depends on your expectation. If you expect normal char siew then this is certainly premium, if you expect char siew to have good texture at high quality then the stringy nature(which isn't too dry though, unlike most terribly cooked char siew) is sure to disappoint
This was pretty good. It's a light marinade but the taste is very different from your normal roast duck. Nice dry thin crisp, clear sauce was thin but packed full of duck flavours.
Plum sauce was well made, and worked incredibly well w the meat
This was good, and special, but the duck breast was slightly dry. Worth a try if you're here
This was delicious, lots of complexity and it's very crunchy. Plus the strong flavour overpowers (pleasantly) and works with every meat we had
The Peking duck isn’t the best in town, but otherwise Hua Ting serves excellent Cantonese dishes. The overall style is conservative, but there are some innovative and yummy creations, usually off the menu. Service, while friendly, does have lapses and is not top-of-class as it lacks warmth. For a private group Chinese meal, this is one of the best venues in Singapore, especially if you work with them to design the menu.
